I saw there was a Reddit post asking about info about YCM and its maintenance. I put a reply in and posted a link to funnel people to NCM, but it might be nice for someone who's more in-the-know to make a reply as well.

A fraction survive. In it's mosaic form it creates a much higher risk for leukemia. Should people with dangerous genetic conditions be allowed to reproduce and toxify the gene pool

Water taste comes from the elements in it. The bitterness comes from the iodine used to purify the water, and also some chlorine too. The are incredibly common in store bought bottled water, which is why the water frequently tastes very bitter.
Fun fact, the reason water from melting ice tastes so funky even though it came from a tap originally is because it is obscenely pure water, since all the impurities are trapped in the cloudy part of the ice cube, alongside any air that was in the water.
